Best Heirloom Vegetables for Fresh Eating, Canning, Freezing?

We have grown only heirloom varieties for the last 9 years and have had good luck with heirloom seeds from Baker Creek. Their Blue Lake variety green beans have been excellent for canning and dehydrating, as well as great tasting (IMHO). We don't generally freeze our produce, so I can't really help you with that.
